SHRIMP CASSEROLE 
1/8 c. butter
1 c. chopped onion
1/2 c. chopped celery
1 bottle clam juice
1/2 c. half & half
2 tbsp. lemon juice
1 1/2 lb. shrimp, peeled & deveined
1/3 c. chopped fresh dill
2 1/2 to 3 c. cooked rice
1 c. crumbled feta cheese

In large skillet heat butter, add onion and celery. Saute. Add clam juice, lemon juice and half and half. Increase heat and cook 10 minutes. Add shrimp and cook until pink, maybe 2 to 3 minutes. Stir in dill.

In casserole layer rice and feta cheese and shrimp mixture. Cover with wax paper and bake about 20 to 30 minutes or until hot. Serves 8 people. Do NOT over cook. Serve with hard rolls or French bread and a fresh fruit salad.
