GREEN BEANS AND POTATOES 
1/4 c. olive oil
1 clove garlic, sliced
2 onions, chopped
4 (16 oz.) cans tomatoes, drained
1 bay leaf
Salt & pepper
6 c. fresh green beans, cut in 1" pieces
3 potatoes, peeled & cut into chunks

Heat the oil and cook the garlic until it is pale gold. Add the onions and saute until soft. Add the tomatoes, bay leaf, salt and pepper and cook gently for 30 minutes. Add the beans and continue to cook for 20 minutes. Add the potatoes and cook 20 minutes more, shaking the pan, occasionally, to see that nothing sticks. Makes 8 servings.
