SHRIMP AND PASTA | |
1 pkg. angle hair pasta 12 oz. fresh uncooked shrimp, cleaned and peeled 1 c. chopped red onion 2 tbsp. butter 1 tbsp. olive oil 1 c. dry white wine 1 tbsp. instant chicken bouillon 1 tsp. dry basil 2 medium tomatoes, peeled, seeded, and chopped 1/2 tsp. salt and 1/2 tsp. pepper 1/4 c. butter, melted 1/2 c. Parmesan cheese 1/2 c. parsley Cook onion in 2 tablespoons butter and olive oil. Cook until tender, but not brown. Stir in wine, bouillon, basil, salt, and pepper. Bring to a boil. Reduce heat and simmer 12-15 minutes until 1/3 is evaporated. Add shrimp; simmer 3 minutes. Add tomatoes. Simmer 2 minutes more. Cook pasta while sauce is simmering last 2 minutes (fresh pasta usually takes 2 minutes). Toss cooked pasta with melted butter, then shrimp sauce. Then Parmesan cheese and parsley. Serves 4. |
