OAT BRAN COOKIES 
1 1/4 c. butter (2 1/2 sticks)
3/4 c. firmly packed brown sugar
1 egg whites
1 tsp. vanilla
1 1/2 c. all purpose flour
1 tsp. baking soda
1 tsp. cinnamon
1/4 tsp. nutmeg
1 c. 100% bran
3 c. Quaker oats (old fashion, uncooked)

Beat together butter and brown sugar until light and fluffy. Beat in egg whites and vanilla. Combine flour, soda, and spices. Add to butter mixture, mixing well. Stir in the bran and then the oats.

Pinch off dough about the size of a walnut. Press it lightly flat. Place on ungreased cookie sheet. Bake 10-12 minutes at 375 degrees in preheated oven.
