CANNED APPLE FILLING 
4 1/2 c. sugar
1 c. cornstarch
2 tsp. cinnamon
1/4 tsp. nutmeg
1 tsp. salt
10 c. water
Approx. 5 lbs. apples
3 tbsp. lemon juice

Combine sugar, cornstarch, cinnamon, nutmeg, salt, water and apples and cook until bubbly. Add lemon juice. Spoon into jars and set in boiling water bath for 20 minutes if using quart jars or 15 minutes if using pint jars.
