CALABACITAS 
3 tbsp. bacon drippings or butter
2 lbs. zucchini, cut into 1/2" cubes
1 can whole kernel corn
1 red or green bell pepper, chopped
1 sm. onion, chopped

In 1 quart saucepan, warm drippings, add ingredients. Stir often, until vegetables are tender. Serves 8 to 10.

Shredded cheese may be sprinkled over the top, cover and serve when cheese has melted.
