CREOLE RICE CAKES 
4 slices bacon
3 tbsp. chopped onion
3 tbsp. chopped green pepper
1 c. cooked rice
1/2 c. flour
1 tsp. baking powder
1 tsp. salt
1/2 tsp. pepper
1 c. canned tomatoes
2 eggs, beaten

Fry bacon crisp; remove from pan. Leave drippings in the pan. Chop bacon and combine with all other ingredients in the order given to make a batter. Cook as fritters in the bacon fat. Serves 4.
