RICE CAKES 
3 eggs, beaten
1/2 c. confectioners' sugar
1/2 c. rice flour
1/2 tsp. lemon extract

Add sugar to eggs and beat. Add flour and lemon and beat several minutes. Drop a generous tablespoon of batter from spoon onto hot griddle. Spread into a 2 inch round. Bake until lightly brown on both sides. Serve immediately.
