2 c. sugar
1 c. either Wesson or corn oil
4 beaten eggs
2 c. pumpkin
1/2 tsp. salt
2 tsp. cinnamon or pumpkin pie spice
1/2 tsp. baking soda
2 tsp. baking powder
2 c. flour

Cream sugar and oil, add eggs. Mix pumpkin, salt, cinnamon or pumpkin pie spice, soda, baking powder and add alternately with flour. Bake in either 2 layers or tube pan or as a sheet cake. If a tube pan 1 hour at 350 degrees.

ICING:

8 oz. cream cheese
1 stick butter
3/4 to 1 box powdered sugar
1 tsp. vanilla
1 tsp. lemon extract

Blend together.
