FRENCH MINT PIE 
CRUST:

3/4 pkg. vanilla wafers, crushed
1/3 stick butter, melted
Dash of cinnamon

Mix together and pat into 8-inch pie pan. Bake at 350 degrees for 10 minutes.

FILLING:

2 squares chocolate, melted
1 c. powdered sugar
1 stick butter, softened
1 egg (2 if small)
3 drops essence mint or 1 tsp. peppermint extract

Beat chocolate, powdered sugar, and butter until very soft. Add egg and extract. Let stand in refrigerator several hours before serving. Tastes like "Thin Mint Girl Scout Cookies!" Serves 1-6.
