PERSIMMON BREAD 
2 eggs
1/2 c. sugar
1/2 c. oil
1 c. persimmon pulp
1 tsp. baking soda
1 1/2 c. sifted flour
1 tsp. cinnamon
1/2 tsp. salt
1/2 c. chopped walnuts
1/2 c. raisins, soak 20 minutes
1 tsp. vanilla

Preheat oven to 325 degrees. Blend eggs, sugar and oil together. Mix soda into pulp. Add to sugar mixture. Sift flour before measuring. Add cinnamon and salt to measured flour. Add chopped nuts to dry ingredients. Fold into persimmon mixture. Pour into oiled 3x4x9 inch loaf pan. Bake for about 1 hour and 15 minutes or until done.
