SWEET & SOUR BLACKEYED PEAS 
3 (1 lb. 4 oz.) cans blackeyed peas, drained
2 c. cooked, diced carrots, drained
1 med. onion, chopped
1 med. green pepper, chopped
1 (2 oz.) jar pimentos, drained
3/4 c. sugar
3/4 c. vinegar
2/3 c. oil

Combine all ingredients and marinate in covered container overnight.
