SALMON LOAF 
2 (16 oz.) cans pink salmon
4 tbsp. butter
4 tbsp. flour
1 1/2 c. milk
2 eggs
1 1/2 c. crushed cheese crackers
1/4 tsp. salt
1/4 tsp. pepper
1/2 tsp. sage, crushed

Drain salmon. Remove skin and bones. Flake and set aside. Make a white sauce by melting butter. Add flour and mix well but do not brown. Add milk and stir until mixture thickens. Stir in salt, pepper and sage. Add beaten eggs and cheese cracker crumbs. Pour over flaked salmon and mix well. Put into a greased baking dish. Bake in moderate oven at 350 degrees, about 30 minutes or until lightly brown and firm.
