“CRANBERRY AMBROSIA DESSERT” IS IN:

CRANBERRY AMBROSIA DESSERT 
1 pound fresh cranberries, ground
1 pound miniature marshmallows
1 1/2 cups sugar

Coarsely chop cranberries using the coarse blade of a meat grinder or by pulsing in a food processor. Cranberries may also be chopped by processing 1 cup at a time in a blender filled with cold water; drain in colander.

In a saucepan, combine cranberries with sugar and heat just til boiling. Remove from heat and cool for 10 minutes. Stir in marshmallows. Mix and chill overnight.

The next day, combine pineapple, nuts and whipping cream beaten with sugar until light and fluffy (see below).

Freeze until firm.

Variation: Chopped Mandarin oranges may be added with or instead of the pineapple.

1 (24 oz) can crushed pineapple, drained
3/4 cup chopped nuts
1 pint whipping cream with 1/2 cup sugar (whip sugar and cream together)

Serves 4 to 6.
