TABBOULEH 
1/2 cup Bulgarian wheat
1 1/2 cups water
2 large tomatoes (or 1 12-15 oz. can diced)
1/2 dozen radishes
1 cucumber
6 scallions
coarsely chopped fresh mint leaves
sea salt, to taste
pepper, to taste

Mix Bulgarian wheat and 1 cup water. Set aside overnight.

Remove seeds and chop tomatoes into small pieces. (Alternatively, use diced canned tomatoes). Chop radishes and cucumbers into 1/4-inch to 1/2-inch pieces. Chop scallions.

Mix wheat and all finely cut ingredients. Use 3 tablespoons of fresh lemon juice and 1/4 cup extra virgin olive oil as dressing.

Makes 4 servings.
