TABBOULEH 
1 1/4 c. bulger wheat, raw (at a natural food store)
4 c. boiling water
1 1/2 c. minced parsley
3/4 c. fresh mint - if dried 3 tbsp.
3 med. tomatoes, chopped
1/2 cuke, peeled and chopped
3/4 c. chopped green onions
1 can garbanzo beans
3/4 c. lemon juice
1/4 c. olive oil
1-2 tsp. salt
Pepper to taste

Pour boiling water over wheat. Let stand 2 hours until it is light and fluffy. Drain excess water, shake or press with hands. Mix wheat and rest of ingredients. Chill 1 hour.
