CRISP DINNER ROLLS 
2 1/2 c. warm water
2 pkg. yeast
1 tbsp. sugar
1 tbsp. salt
2 tbsp. softened butter
6 1/2 to 7 1/2 c. flour
1 egg
1 tbsp. milk

Preheat oven to 400 degrees. Measure water into bowl. Sprinkle in yeast; stir until dissolved. Add sugar, salt, butter, and 3 cups flour; beat until smooth. Add enough additional flour to make dough stiff. Knead. Let rise. Combine egg and milk; brush on rolls. Bake 15 minutes. Makes 3 dozen.
