BAKED STUFFED SHRIMP 
1 lb. (U 15) shrimp
Vegetable oil
2 scallions, diced fine
1 stick Ritz crackers
1/2 pepper, diced fine
6 tbsp. lemon juice

Saute green pepper and scallions until soft in vegetable oil (about 1/2 cup). Add lemon juice. Process crackers in food processor. Add to peppers and scallions. May need more vegetable oil.

Clean and devein shrimp. Split open but leave tails on. Put in greased or Pam sprayed glass dish. Place stuffing over shrimp. Bake at 350 degrees for 20 to 25 minutes. Brown stuffing under broiler for 1 minute (watch closely).

NOTE: I add more lemon than called for - suit to your taste.
