BAKED STUFFED ZUCCHINI | |
This is my original recipe and it has been a big hit with family and friends. 3 zucchinis (or more) 1 (8 oz.) pkg. cream cheese 2 cups shredded cheese (your choice) 1/2 medium onion, diced and sautéed) 4 pieces bacon, fried and cooled 4 to 5 slices day old or dried out French bread Preheat oven to 350°F. Slice zucchinis lengthwise and season open side with your favorite seasoning. I used a Tuscan seasoning blend. Drizzle with olive oil and lay face down on a cookie sheet that has olive oil on it. Bake at 350°F for 10 to 15 minutes to make the zooks tender. While they are baking assemble all the other ingredients into a bowl and mix well. I added some garlic salt and pepper to the mixture. After you take the zooks out of the oven carefully take the centers out and add to the mixture. Then begin to fill your hulled out zooks. Lay them back on the cookie sheet and add more shredded cheese if desired. Bake for another 10 or so minutes. Bon Appetit! Submitted by: Debi |
