ZUCCHINI BREAD 
3 eggs, beaten
1 c. salad oil
2 c. sugar
2 c. grated zucchini
2 tsp. vanilla
3 c. flour
1 tsp. baking soda
1/2 tsp. baking powder
1 tsp. salt
1 tsp. cinnamon
1/2 c. nuts (optional)

Blend sugar and salad oil; add eggs and whip. Add zucchini and vanilla to mixture and blend. Sift dry ingredients together, add to creamed mixture, add nuts. Bake in a 325 degree oven for 1 hour or until toothpick comes out clean. Use 2 loaf pans, greased well and floured. This bread freezes well.
