IMPOSSIBLE CHEESECAKE 
3/4 c. milk
2 tsp. vanilla
2 eggs
1 c. sugar
1/2 c. Bisquick baking mix
2 pkg. (8 oz.) cream cheese, cut into 1/2" cubes & softened

CHEESECAKE TOPPING:

Mix well:

1 c. sour cream
2 tbsp. sugar
2 tsp. vanilla

Heat oven to 350 degrees. Grease pie plate (9 x 1 x 1 1/2 inch). Beat milk, vanilla, eggs, sugar and baking mix in blender on high speed for 15 seconds. Add cream cheese, cover and blend on high speed 2 minutes. Pour into pie plate. Bake 40-45 minutes or until center is set; cool.

Prepare Cheesecake Topping: Carefully spread over top of cooled cheesecake. Serve with canned pie filling or fresh fruit if desired. About 6 servings.
