SMALL SIZE: 1 c. flour 1 tsp. baking powder 1/3 tsp. salt 1/2 tsp. mixed spices (cinnamon & nutmeg) 1/2 tsp. vanilla 1 egg 1/3 c. sugar 1/3 c. corn oil butter 1/2 c. currants LARGE SIZE: 3 c. flour 3 tsp. baking powder 1 tsp. salt 1 1/2 tsp. mixed spices (cinnamon & nutmeg) 1 1/2 tsp. vanilla 3 eggs 1 c. sugar 1 c. corn oil butter 1 1/2 c. currants Combine ingredients; roll out 1/4" thick on floured board; cut in small circles (juice can). Bake on griddle or electric skillet until light brown (300 degrees). Turn once. Dip in white sugar while warm, or sprinkle on. Store in Tupperware container. May leave some plain. |
