PICKLED BLACK-EYED PEAS 
4 cups black-eyed peas, cooked and drained
1 cup vegetable oil
1 clove garlic
1/4 cup wine vinegar
1/2 tsp salt
1/8 tsp freshly ground black pepper

Mix all ingredients and put into jar. Refrigerate. Remove garlic after 1 day. May be kept up to two weeks in the refrigerator. Serve on New Year's Day for good luck all year long.
