SUCCOTASH 
3 tbsp. oil
1 med. onion, chopped
1/2 lb. ground beef
1 can yellow corn, drained
1 can red kidney beans or lima beans, drained
Salt and pepper to taste

Cook onion in oil until slightly browned. Add beef and cook, stirring until brown. Drain fat. Add corn, beans, salt and pepper to meat mixture and simmer 30 minutes.
