GARDIES PILAFI (SHRIMP WITH
RICE)
 
1 med. or lg. onion, chopped
1/2 c. olive oil
1/2 or 1 lb. shrimp
1 1/2 c. canned tomatoes
3/4 or 1 c. uncooked rice
1/2 tsp. dried oregano leaves
Salt and pepper to your own taste
1 1/2 c. water

Saute onion in olive oil until golden brown. Combine all other ingredients, cover and simmer until water is absorbed. Makes 6 servings. Enjoy.
