RED BEANS AND RICE 
1 lb. red beans
2 lb. ham, cut up
4 lb. smoked link sausage
2 pkg. shrimp or crab, boiled
1 can Rotel tomatoes & pepper
2 tbsp. Tabasco sauce
1 tsp. black pepper
2 lg. chopped onions
1 c. onion tops or chives
2 lg. bell peppers, chopped
2 c. celery, chopped
6 c. water
Salt to taste
1 lg. box of rice

In a 3 gallon pot, cover red beans with water and boil for 5 minutes. Cover and set aside. Soak for 1 hour. Add together 6 cups of water and boiled crab. Cook at rolling boil for 15 minutes. Add cut up ham and simmer 30 minutes. Remove crab and ham. Add smoked sausage and cook 20 minutes. Add all ingredients to beans and cook until done, about 1 hour.

Makes 12 servings.
