RED BEANS AND RICE 
1 c. chopped onion
2 lg. garlic cloves, minced
1 lg. can red beans
1 bay leaf
2/3 c. chopped green pepper
2 tbsp. butter
1/2 lb. Eckridge sausage, sliced
4 c. hot cooked rice

Saute onions, pepper, and garlic in butter. Stir in beans, sausage and bay leaf. Simmer 10 minutes. Remove bay leaf. Serve over rice. 4 to 6 servings.
