RED BEANS AND RICE 
1 lb. red beans (pinto beans may also be used)
1 lb. hot sausage (Polish or breakfast sausage may be used)
1 lb. ham, diced
1 lg. onion, chopped
1 lg. bell pepper, chopped
Garlic, diced (if desired)
Salt to taste
Hot sauce (Tabasco) if desired
Rice

Soak beans. If breakfast sausage is used, scramble and drain grease. In a large pot cook the pre-soaked beans, sausage, ham, onion, bell pepper, garlic and salt until beans are done. Serve on a bed of rice. Add hot sauce to taste.
