SEAFOOD TOMATO ASPIC 
1 lbs. seafood: shrimp, crab or mixture (or "artificial" crab)
1 c. chopped celery
1/2 c. chopped green onions, including tops
1 (6 oz.) box lemon Jello
1/2 c. boiling water
1 1/4 c. tomato juice
2 tbsp. cider vinegar
1/8 tsp. Tabasco sauce
Mayonnaise

Dissolve Jello in boiling water. When dissolved completely add tomato juice, vinegar and Tabasco. Mix well. Refrigerate until mixture begins to thicken (1/2 to 1 hour). Add remaining ingredients. Pour into an 8 x 8 inch layer pan or 6 individual serving dishes. Chill until firm (at least 4 hours). To serve, top with mayonnaise and garnish as desired. Serve with crackers as a first course. Serves 6.
