SUMMER SQUASH CASSEROLE 
2 c. cooked summer squash
1/2 c. mayonnaise
1/2 c. chopped onion
1 egg, beaten
1 tsp. sugar
1 c. grated cheddar cheese
1/4 c. butter
Salt & pepper to taste
Ritz cracker crumbs

Cook and drain squash (do not peel). Use a fork to break up pieces a little. Mix mayonnaise, onion, egg, sugar and salt and pepper and mix well and mix with squash in a buttered casserole dish. Sprinkle with cheese then cracker crumbs. Dot with butter. Bake, uncovered 30 minutes at 350 degrees.
