PUMPKIN MUFFINS 
2/3 c. non-fat dry milk
2 tsp. cinnamon or pumpkin spice
6 pkgs. sweet & low
6 tbsp. flour
1 tsp. baking powder
2 eggs
1 tsp. vanilla
1 c. pumpkin
1/2 c. grated carrot
4 tbsp. raisins

Combine all dry ingredients. Combine eggs and vanilla. Add pumpkin and mix well. Add dry ingredients and then add carrots and raisins and mix well. Place in muffin pan (small). Bake for 15 minutes at 350 degrees. Serve warm. Makes 2 servings - 6 muffins each.
