BEET SALAD 
1 can shoestring beets
3 tbsp. vinegar
2 tbsp. white horseradish
1 tbsp. sugar
1 stalk celery, diced (optional)
1 c. hot water
1/2 tbsp. salt
6 oz. pkg. lemon Jello
1-1/2 tbsp. minced onion

Dissolve Jello in hot water. Add rest of ingredients and mix well. Pour into mold and chill (fits well into 8 x 11 inch pan). Serves 12.
