BROCCOLI CHICKEN ROLLS 
2 slices (3/4 oz. each) low fat cheese
2 whole boneless chicken breasts, halved, skin removed, pounded to flatten
1 pkg. (10 oz.) chopped broccoli
1/2 c. skim milk
1 tbsp. flour
1/4 tsp. pepper
1 tsp. parsley

Cut one slice of cheese into 8 strips; place 2 strips on each chicken pie. Place 1/4 of the broccoli over cheese in the center of each piece.

Fold ends of chicken over broccoli and secure with wooden picks. Place rolls seam side down in an 8 x 8 inch baking dish. Cover with wax paper.

Microwave at high 5-8 minutes, or until chicken is no longer pink, turning over and rearranging once or twice. Drain and set aside.

Blend milk, flour, parsley and pepper in a 2 cup measure. Microwave at high 1 1/2-3 minutes, or until thickened, stirring 2-3 times during cooking. Cut up and add remaining cheese slice, stirring until sauce is smooth.

Pour: Sauce over chicken. Microwave at high 30-60 seconds, or until rolls are heated through.

Since microwave ovens vary in power, you may need to adjust your cooking time.
