EGGLESS DOUGHNUTS 
1 c. hot mashed potatoes
1 1/2 c. sugar
1 1/2 c. milk
4 c. flour
2 tbsp. butter
4 heaping tsp. baking powder

Stir butter into hot mashed potatoes. Add sugar, milk and flour. Flavor with lemon extract or nutmeg. Beat well and roll out 1/2 inch thick. Cut and fry.
