PUMPKIN BARS AND VANILLA
FROSTING
 
3/4 c. butter
2 c. sugar
4 eggs
1 (16 oz.) can pumpkin
2 c. flour
2 tsp. baking soda
1 tsp. cinnamon
1/2 tsp. salt
1/4 tsp. nutmeg
1 c. chopped nuts
1 c. raisins

Heat oven to 350 degrees. Cream butter and sugar until light and fluffy. Add eggs and pumpkin. Mix well and combine dry ingredients to creamed mixture. Mix well. Stir in nuts and raisins. Spread mixture into greased and floured 15 1/2 x 10 1/2 x 1 inch pan. Bake at 350 degrees for 30-35 minutes. Cool and frost with vanilla frosting.

VANILLA FROSTING:

1 (3 oz.) pkg. cream cheese
1/3 c. butter
1 tsp. vanilla
3 c. powdered sugar

Combine softened cream cheese, butter and vanilla. Mix until well blended. Gradually add sugar (mix well after each addition). These bars can be frozen. Thaw and cut before serving.
