POTATO AND PORK CASSEROLE | |
2 med. sized prebaked potatoes, peeled & sliced 1/2 c. cubed cooked pork 1/4 c. milk 1/2 (10 3/4 oz.) can cream of mushroom soup (save remaining soup, covered in refrigerator, for other uses) 1/2 tsp. salt 1/4 tsp. pepper 2 green onions (scallions), chopped (optional) Layer sliced potatoes and pork in greased 1 quart casserole. In small saucepan, gradually combine milk and soup; stir until smooth. Stir salt, pepper and onions into milk mixture. Pour sauce over potatoes. Bake in 325 degree oven for 25 minutes or until heated through. Makes 2 servings. |
