CRABMEAT QUICHE 
9 inch unbaked pastry shell
1 (7 3/4 oz.) can crabmeat
1/4 c. green onion chopped
2 tbsp. parsley, chopped
4 eggs
1 1/2 c. light cream
2 to 3 tbsp. sherry
1 tsp. salt
Dash of cayenne pepper
Dash of black pepper
1/2 c. grated Gruyere or,
Swiss cheese

Preheat oven to 350 degrees. Drain and break up crabmeat. Combine in medium sized bowl with onion and parsley. Mix and spread evenly in pie shell. Sprinkle on cheese. Beat eggs well with cream, sherry, salt and pepper. Pour into shell and bake until set, 35 to 40 minutes.
