SPONGE CAKE - HOT MILK 
2 eggs
1 c. sugar
1/2 tsp. salt
1/2 c. milk
Butter size of a walnut
1 c. flour
1 tsp. baking powder
Grease and flour 8 x 8 x 2 inch pan

We use this in place of shortbread when strawberry season is here. Beat first 3 ingredients so well that it is thick and lemon colored.

Heat milk and butter until hot. (Do not boil.) Add to egg mixture. Add flour and baking powder. Bake at 250 degrees for 45 to 60 minutes or until top has browned.
