CHOCOLATE CHIP OATMEAL COOKIES 
3 3/4 c. flour
1/2 tsp. salt (optional)
1 1/4 c. butter
3/4 c. scant brown sugar
3/4 c. scant white sugar
3 c. Quaker Minute cook oatmeal
5 eggs, unbeaten
1 1/2 tsp. baking soda
3 to 4 tbsp. hot water (not boiling)
2 1/2 tsp. vanilla
1 1/2 c. walnuts, cut up
1 c. chocolate chips

Cream butter and sugar. Add eggs, one at a time, beat well. Dissolve soda in hot water. Add to creamed mixture. Add oatmeal, flour, nuts and chocolate chips. Drop from full teaspoon onto greased cookie sheet. Bake at 375 degrees for 14 minutes. (Dough not too moist.)
