SALMON CROQUETTES 
2 c. salmon
2 eggs, beaten
1/2 c. chopped onion
1 tsp. pepper
1/2 tsp. red pepper
2 tsp. salt
1 tsp. Worcestershire sauce
1 tbsp. lemon juice
1 c. flour
1/2 c. oil

Drain salmon and mix with eggs, onion, pepper, salt and Worcestershire sauce. Make into small balls or patties. Sprinkle with lemon juice. Roll in flour and fry in oil until brown on both sides, turning only one time.
