CHINESE STYLE FRIED RICE 
1 1/4 c. water
1 1/2 c. instant rice
1 egg, slightly beaten
3 tbsp. butter
1/3 c. grated onion
1/4 c. water
3 tbsp. soy sauce

In a small saucepan bring water to boil. Stir in instant rice, remove from heat, cover and let stand 10 minutes.

Meanwhile, using a 10 inch skillet cook egg in butter, stirring constantly. Add 1/3 cup grated onion and rice to egg. Saute, stirring over medium heat until mixture is lightly browned. Mix water and soy sauce and stir into rice.
