CHINESE STYLE FRIED RICE 
1 1/4 c. water
1 1/2 c. Minute Rice
1 egg, slightly beaten
3 tbsp. butter
1/3 c. chopped onion
1 sm. can mushrooms
1 can peas
Soy sauce to taste

In small saucepan, bring water to a boil. Stir in rice, remove from heat, cover and let stand 5 minutes. Meanwhile, using a 10 inch skillet, melt butter (cook until starts to brown). Add egg (stirring to brown). Add onion and rice. Saute, stirring over medium heat until mixture is lightly browned. Add mushrooms and peas. Add soy sauce to taste. VARIATION: Add leftover chicken or pork.
