TURKEY CASSEROLE 
1 box long grain and wild rice mix
2 or 3 c. cubed, leftover turkey
1 c. diced celery
1 med. onion, chopped
1 sm. green pepper, chopped
2 cans cream of chicken soup, undiluted
1 (8 oz.) can water chestnuts, drained, sliced and chopped
3/4 c. mayonnaise
Hard chow mein noodles, potato chips, crushed or seasoned bread crumbs for
topping, just before baking

Prepare rice as directed on package. Combine rice and rest of ingredients except topping. Mix well and pour into 9x13 inch baking dish. Cover and let stand overnight in refrigerator. When ready to bake, sprinkle with choice of topping. Bake at 350 degrees uncovered for 55 to 60 minutes or until hot and bubbly. Makes 8 to 10 servings.
