SHRIMP CASSEROLE 
1 c. chopped onion
1 c. chopped green pepper
1 c. chopped celery
4 c. cooked shrimp
1 stick butter
1 can mushroom soup
1 can cheddar cheese soup
2 c. cooked rice
1 c. chopped pimento
1/3 c. chopped parsley
1 tbsp. hot sauce (Tabasco)
3/4 tsp. pepper
1 tsp. salt
Bread crumbs
1 stick butter

Saute the vegetables in 1 stick of butter until tender. Add the rest of the ingredients, except bread crumbs and the other stick of butter, and mix well. Put in a 13 x 9 inch casserole. Sprinkle bread crumbs on top and dot with 1 stick butter. Bake at 350 degrees for 30 minutes.
