MINI CHEESE ROLLS 
1 lb. sharp Cheddar cheese, grated
1 cup (2 sticks) butter
2 cups all-purpose flour
1/2 teaspoon garlic salt
paprika

Preheat oven to 400°F.

Cream together butter and cheese until fluffy. Stir in flour and garlic salt, mixing only until well combined.

Form mixture into 1-inch diameter logs. Wrap in wax paper and chill for 1 hour.

Slice into 1/2-inch long pieces (so that they resemble Tootsie Rolls).

Sprinkle paprika lightly on a dish. Roll each piece in paprika and place on an ungreased baking sheet.

Bake for about 10 minutes until lightly golden. Remove to wire racks to cool.

Variations: Use blue cheese crumbles instead of Cheddar. For onion cheese logs, add 1 package onion soup mix and omit garlic salt.

Mixture can be frozen before baking until ready to use (up to 3 months).
