CANDIED CUCUMBER RINGS | |
1 c. vinegar 1 tbsp alum 7 ounce red food color enough water to cover the cukes Make Syrup: 2 c. vinegar 2 c. water 7 c. sugar 4 to 8 cinnamon sticks 1/4 lb. red hot candy Peel and slice enough cucumbers to make two gallons. Remove seeds. Soak in two cups of household lime, with enough water to cover all night. Next morning drain and wash in cold water, then let set in cold water for three hours, then drain and wash off. Simmer two hours in the following mixture, drain off and make syrup. Pour over rings and let stand for 24 hours, drain and reheat the syrup everyday for three days and each day add one cup of sugar. On the fourth day take the rings out and reheat the syrup, and put the rings back in the syrup and let get real hot, but not boiling. Put into jars and seal. |
