CUCUMBER CINNAMON RINGS | |
1 1/2 gal. cucumber rings 2 c. lime (hydrated) 8 1/2 c. water 1 sm. bottle red food coloring 1 c. vinegar 1 tbsp. alum Water SYRUP: 2 c. vinegar 10 c. sugar 1 lb. red hots 2 1/2 c. water 8 sticks cinnamon Cut ends off cucumbers. Peel. Remove center seeds and cut into rings. Put rings in lime water and let stand 24 hours. Drain and rinse well in cool water. Pour cold water over rings and soak 3 hours. Drain. Add 1 cup vinegar, 1 small bottle of red coloring, 1 tablespoon alum and water to cover. Heat and simmer 2 hours. Drain. Make syrup. Bring to boil and pour over rings. Keep lid on and let stand overnight in crock. Drain and reheat syrup for 3 mornings. On 3rd day - heat rings and syrup and seal in jars. |
