MEAT BALLS & SAUCE 
SAUCE:

1 lg. onion
2 cloves garlic or 1 tsp. garlic powder
2 tbsp. chopped parsley
2 tbsp. oil
1 lg. can tomatoes
3 sm. cans tomato sauce
3 sm. cans of water
2 bay leaves
1/4 tsp. thyme
6 stems of rosemary
1/2 tsp. sweet basil
1 tsp. oregano
1 sm. dry red peppers (opt.)
1 tsp. salt
1/2 tsp. pepper

Soften onion and garlic in oil. Add parsley and cook only until wilted. Add tomatoes and tomato sauce, water. Rub spices together to powder if desired and add to sauce. Cook slowly.

MEATBALLS:

2 lbs. ground meat
1 onion, chopped
2 cloves garlic
2 tbsp. parsley
3 slices wet bread (press water out)
1 tsp. salt
1/2 tsp. pepper
2 tbsp. grated Parmesan cheese
2 eggs

Mix well and if too dry add about 3 tablespoons of milk or tomato sauce. Shape and roll in flour. Brown slowly in lard or oil. Makes 14 balls. Serve with paste.
