SPINACH SALAD 
1 lb. spinach
4 slices bacon

DRESSING:

4 tbsp. olive oil
1 1/2 tbsp. wine vinegar
1 tsp. Dijon mustard
1 clove garlic
1 1/2 tsp. tarragon
Salt and pepper

Wash spinach; wrap in towel and chill two hours or more. Fry bacon until crisp. Mix dressing ingredients and chill.

Toss spinach with dressing. Add bacon and 2 teaspoons hot bacon fat and re- toss. Fresh sliced mushrooms may be added.
