ENCHILADA CASSEROLE | |
1 1/2 lbs. hamburger 1 sm. onion 1 c. enchilada sauce 1 can cream of mushroom soup 1 can cream of chicken soup 1 c. milk 12 tortillas (corn) 1 c. pitted olives, sliced 1-2 c. grated cheddar cheese Brown hamburger and onion, do not season. Mix all ingredients except tortillas and cheese. In a 9"x13" pan, alternate layers of torn tortillas with mixture. (I tear tortillas into fourths.) Sprinkle top with grated cheese. Cover with foil. Bake at 300 degrees for 1 to 1 1/2 hours. Uncover last 10 minutes. This casserole is soupy, but delicious. |
